It is always a refreshing pleasure when travelling into the giant scriptures of the Alberta Rocky Mountains. The highway opens to an endless view of dazzling Rockies where the snow caps on the very top sparkles from the reflections of sunlight.
About The Bison Restaurant
The visit to Alberta took us to Banff, a resort town within Banff National Park of Alberta. It was here we had the pleasure to visit The Bison Restaurant. Chef Dave Cousineau and his team carefully pick the freshest seasonal ingredients from local Alberta, British Columbia and Saskatchewan farmers that specialize in sustainable practices. As a result The Bison’s menu changes regularly according to the available fresh ingredients, reflecting the regional specialties the Rockies has to offer.
Appetizers
For appetizers we ordered two dishes. First came The Bison Carpaccio, with pickled radishes, shaved manchego, chorizo aïoli, garlic chips and watercress. The thin slice fresh raw bison has a very smooth texture. The plating of the dish allows all the ingredients to be wrapped and consumed at at once. The unity of flavours was truly mesmerizing.
The Escargot in a Bone is a dish of interesting combination. The amount of escargot was a delightful almost 2 dozens of them. Fresh and meaty, the escargots were perfectly cooked to the right texture. This is one of the rare occasions I taste real escargots as they should be. The silky and fatty bone marrow is a surprising great pairing to the escargot. This is one of the most well balanced and delicious dish I have had. This is a must try dish that I highly recommend.
Main Course
Alberta is known for its high quality beef. We definitely got what we asked for at with the Beef Tenderloin. It was served with wild b.c. mushrooms, fingerling potatoes, smoked onion purée, and jus. Cooked to a perfect medium rare, the beef was as it is with minimal seasoning, allowing its natural flavour to take center stage. Same with the accompanying vegetables, fresh and tasty as they were. This is a dish fitting for a true northern pioneer after a long day’s journey.

I can only imagine what it would be like at The Bison in the summertime, to be enjoying culinary creations with summer ingredients on the beautiful terrace of The Bison overlooking the mountains.
Or I can just come back to The Bison for a visit. That I think I definitely should.
